- Pour in the heavy cream and add the sun-dried tomatoes. Let it simmer for 2 minutes until it starts to thicken slightly.
- Add the refrigerated tortellini directly into the pan. (No need to boil them separately: the cream will cook them!)
- Cover and cook for about 5 minutes or until the pasta is tender.
- Toss in the spinach at the very end and stir until it wilts. Serve immediately.

Who says you need to spend hours rolling enchiladas? Using a rotisserie chicken is the ultimate chicken dinner hack.
Ingredients:
- 1 Rotisserie chicken (shredded)
- 1 can (15 oz) Enchilada sauce
- 10 Small flour or corn tortillas
- 2 cups Shredded Mexican blend cheese
- 1 small can Diced green chiles
Instructions:
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the shredded chicken with the diced green chiles and half a cup of the enchilada sauce.
- Dip each tortilla into the remaining sauce, fill with the chicken mixture, and roll tightly.
- Place the rolls seam-side down in a baking dish.

- 4 Salmon fillets
- 1/2 cup Basil pesto (store-bought is fine!)
- 1 bunch Asparagus (trimmed)
- 1 pint Cherry tomatoes
- 1 Lemon (sliced)
Instructions:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper. Place the salmon, asparagus, and tomatoes on the sheet.
- Spread a generous tablespoon of pesto over each salmon fillet. Toss the veggies in any leftover pesto.
- Place lemon slices on top of the salmon.
- Bake for 12–15 minutes until the salmon flakes easily with a fork and the tomatoes have burst.

4. Classic Cacio e Pepe
Sometimes, less is truly more. This Roman classic relies on the quality of the cheese and the heat of the pepper to create a silky, addictive sauce.
Ingredients:
- 8 oz Spaghetti or Bucatini
- 1.5 cups Finely grated Pecorino Romano cheese
- 2 tsp Coarsely ground black pepper
- 3 tbsp Unsalted butter
- Salt (for the pasta water)
Instructions:
- Boil your pasta in salted water until it’s slightly under al dente. Reserve 1 cup of the pasta water before draining.
- In a large skillet, melt the butter over medium heat and toast the black pepper for about 1 minute until fragrant.
- Add 1/2 cup of the reserved pasta water to the skillet and bring to a simmer.
- Toss in the pasta and reduce heat to low.
- Gradually add the Pecorino Romano, tossing vigorously with tongs. If it looks dry, add more pasta water a tablespoon at a time until a creamy sauce forms.

- 2 Large flour tortillas
- 1/2 cup Pizza sauce
- 1 cup Shredded mozzarella cheese
- 1/4 cup Pepperoni slices
- 1 tsp Dried oregano
Instructions:
- Place one tortilla in the air fryer basket.
- Spread a thin layer of pizza sauce, followed by cheese, pepperoni, and a sprinkle of oregano.
- Air fry at 400°F (200°C) for 4–5 minutes until the edges are golden and the cheese is bubbly.
- Repeat for the second tortilla. (Pro-tip: Use two tortillas stacked on top of each other for a "stuffed crust" vibe!)
8. Poached Orange Salmon

Ingredients:
- 2 Salmon fillets
- 1 cup Orange juice
- 2 tbsp Soy sauce

- Place the salmon fillets in the liquid. The liquid should come about halfway up the sides of the fish.
